This recipe can call for either chicken, squid or octopus. It is up to your taste buds!

Ingredients:

Chicken

1. Bone two pounds chicken or use boneless chicken.

2. Cut meat into small pieces.

3.Saute chicken in two tablespoons butter or margarine.

4. Lower heat, cover and simmer 15 to 20 minutes.



Squid or Tako

1. Saute or steam 1 1/2 lbs of squid or tako.

2. Cut into thin crosswise slices.



Leaves

1. Wash luau leaves, removing stem and fibrous part of the veins

2. Place Luau leaves in large saucepan; add water.

3. Bring to a boil, lower heat, and simmer for one hour, stirring frequently.

4. Drain luau thoroughly; stir in coconut milk, salt and chicken or squid

5. Simmer but do not boil.



Enjoy with sticky rice and fresh mahi fillet!
